2011 Dinner Menu

Pickering has been home to a large variety of cultures starting with the Oneida Nation, a small band of Iroquois (Seneca) who had migrated from the territory south of Lake Ontario in the 1600's. The French explorers and fur traders had their influence as did the Dutch and English settlers. Today Pickering is the proud home of many cultures from around the world.
We would like to include different cuisines as part of our menu to celebrate Pickering's colourful history.
APPETIZERS
The appetizers have been carefully selected and prepared to allow the guests an extraordinary gastronomic adventure sampling foods from the various ethnic cultures that make up Pickering's colourful and diverse society.
STARTERS
AUTUMN HARVEST ROASTED SQUASH TRIO PUREE
A tribute to the native founders a delicious autumn soup made from assorted squash and finished with a hint of local honey. Hubbard, Butternut and Acorn Squash slow roasted served with a coriander yogurt on a squash frite
Artesian Bread and Rolls/Bread Sticks/ Naan/Herb Butter and Hummus
SALAD - CROWN OF LOCAL GREENS
A cucumber ribbon embracing a selection of local assorted Mesulin greens with fresh blueberries, dried cranberries finished with wild berry vinaigrette. Sunflower seeds will be available in bowls.
INTERMEZZO – LEMON ICE WITH FRESH MINT
A light and refreshing palate cleanser with hints of fresh lemon

Choice of entrées include:
BEEF WELLINGTON
Caramelized onion and shallot duxelle, AAA Canadian beef tenderloin served en croute with a red wine au jus, served with herbed roasted root vegetable mélange
SALMON KOLIBIAC
A duet of Fresh Atlantic salmon and smoked Norwegian Salmon layered with wild rice and grated orange peel baked in a puff pastry purse served with herbed roasted root vegetable mélange
OR
VEGETARIAN WELLINGTON
Grilled zucchini, eggplant, red peppers, sprinkled with fresh herbs and Italian cheeses wrapped in puff pastry
DESSERT
Chocolate Bomb filled with a Belgium chocolate ganache served with a
Grand Marnier crème anglaise and iced strawberry.
